The humble dumpling exist in almost every culture and almost in every corner of the world. There is something so elegant in the simplicity of wrapping meat and vegetables in a layer of pastry before cooking it. Trapping in all the delicious flavours and juices. All those trapped flavours just explode on your palate when you bite into it. A dumpling can also evoke a sense of home, nostalgia and comfort when eating it. If not, at least a happy warm full tummy. This tour will focus around dumplings from the chinese cuisine. We will travel around Auckland via public buses, exploring the different chinese dumpling styles. Starting from the CBD, we will go to New Market then Eden quarters and finally Dominion road. We will take a look at dumpling from the 4 cardinal directional areas of China: North, South, East and West.
Each major region of China has hugely different dumpling styles. From the original dumpling makers from the north, to the southern's use of rice flour instead of wheat. How the west likes their spiciness, while the east puts liquid soup inside their dumplings. These dumplings although might seem common place now but it is the reasoning, the philosophies behind each region that makes me appreciate them even more. Auckland city has a huge chinese population. Bringing with them their delicious recipes and dumpling wrapping skills. So let's take advantage of that! Let's go eat loads of dumplings!
